Histatins are a family of histidine-rich cationic peptides secreted by the parotid and submandibular glands. They have potent antifungal activity (particularly against Candida albicans — reduced histatin levels contribute to oral candidiasis in xerostomic patients), antibacterial activity, and contribute to wound healing and enamel pellicle formation. Statherin and proline-rich proteins primarily inhibit calcium phosphate precipitation and promote remineralisation.
